Working with Baan Lao, I was excited to draw inspiration from my favourite Thai flavours. I introduced a little heat and savoury elements where you normally wouldn’t find them, using lemongrass and tamarind as sweet and sour flavours. Introducing subtle, fresh flavours like mint and lime leaf to balances it all out. Ultimately, the cocktails are designed to completely compliment the tasting menu.”

Our wine sommelier and our tea sommelier have lovingly created exquisite products that reflect their passions, and are sharing them in these delicious cocktail creations. Master Sommelier, Pier-Alexis Soulière, was raised in Quebec where making maple syrup is a tradition for his family. Each spring, he works in his sugar bush collecting sap and boiling it down for the liquid gold known as maple syrup. Del Tamborini, our Tea Sommelier, has developed two fresh, fun and elegant spirits, artfully infused with distinctive blends of high-quality tea under the business banner of “The Spirit of Tea” – Earl Grey Black Tea-Infused Gin, and Vanilla Rooibos Liqueur which was awarded “Best Spirit” in the 2020 Made in Vancouver Awards.
