“When it comes to constructing a cocktail, you always have to look for the balance – much like when preparing traditional Thai food. Working with Baan Lao, I was excited to draw inspiration from some of my favourite Thai flavours by introducing a little heat, and savoury elements where you normally wouldn’t find them. Using lemongrass and tamarind as sweet and sour flavours. Introducing subtle, fresh flavours like mint and lime leaf to balance it all out. Ultimately, the cocktails compliment the tasting menu, not compete with it.”
